I wish I could pledge something. Alas, being only fourteen has its negatives. I hope all goes well for this project.
And, if perhaps it does get funded (and by the current looks of things at $340, it'll most likely happen), maybe there will be a second book done? I would love to contribute in any way that doesn't involve me giving money (cheap-sounding of me, yes).

1. Are there a set determined amount of pages as of yet (other than the short story that may or may not be included depending if someone backs it at a over $200 budget)?
2. I'm just going to assume this, but it will be available in the NG store?
So, about your first question.
200 is the amount of pages in the book not including the table of contents, author bios, the introduction, etc. Also, there may be a slight misunderstanding here. The personalized story reward will not be included in the anthology. That would be strong-arming into a publication, which should never happen.
Yes, every version will be available in the NG store, whether it's the print edition or in the tablet/e-reader format.
